The New York Berry Cheesecake is a baked cheese cake of American origin. This cheesecake consists of the classic base of cookies and butter, a soft and enveloping cream based on eggs and cheese, then garnished with sour cream and a berry sauce. Ingredients
- 7.05 oz Digestive cookies
- 7 tbsp butter
- 2 eggs
- 14.11 oz cream cheese
- 0.42 cups plain natural yogurt (or Greek yogurt or fresh liquid cream)
- 0.42 cups sugar
- 0.07 cups cornstarch
- Half lemon juice
- 0.42 cups sour cream
- 7.05 oz berries
- 0.21 cups sugar

Steps
To make the New York Berry Cheesecake, blend the cookies and add the melted butter, mixing well.
Spread the mixture on the base and sides of a springform pan (Ø7 inches), pressing well with the back of a spoon, and place in the fridge to set.
In a bowl, beat the eggs with the sugar, then also add the yogurt while continuing to mix. Finally, add the cornstarch and lemon. Mix to obtain a homogeneous and creamy mixture.
Pour the obtained cream over the cookie base, leveling it well with a spoon. Bake in a preheated oven at 320°F for 40 minutes.
Once baked, let the cheesecake cool in the oven with the door open.
When the cake is cool, remove the pan and transfer it to a plate. Pour the sour cream over the cake and spread it evenly. Let it rest in the refrigerator for 2 hours.
In a saucepan, pour the berries and add the sugar, cooking over low heat. Remove from heat and let it cool.
Pour the berry sauce over the cake, cover the pan with foil, and let it set for one last time in the fridge for an hour.
When the dessert is well compacted, garnish it with fresh raspberries (set aside), some pistachio granules, and serve. Enjoy!
