Orecchiette with Shrimp and Dried Peppers

The orecchiette with shrimp and dried peppers is a first course with an irresistible flavor.

I admit, dried peppers are one of my culinary passions; I use them in first courses, second courses, and even on pizza toppings!

When an ingredient excites me so much, I’m always eager to experiment with new combinations: that’s how this recipe was born!

I’m not from Puglia and I didn’t make the orecchiette at home, and as I always say: to successfully make a dish, you need to use fresh and quality ingredients. In this case, I used orecchiette that were brought to me directly from Puglia, and I dressed them with fresh shrimp cooked in a pan, dried peppers, and toasted breadcrumbs.

I served a flavorful and irresistibly scented first course at the table!

Orecchiette with Shrimp and Dried Peppers

Ingredients

  • 1 3/4 cups Orecchiette
  • 7 oz Shrimp
  • 3 Dried Peppers (cruschi)
  • Breadcrumbs
  • 1 clove Garlic
  • to taste Extra Virgin Olive Oil
  • to taste Salt

Preparation

  • To make orecchiette with shrimp and dried peppers, wash the shrimp under running water, removing the head and shell. Then remove the internal intestine: cut the shrimp’s back with a knife and remove it gently, being careful not to break it. Place the shrimp flesh in a colander to let them dry.

  • In a pot, heat a drizzle of extra virgin olive oil. Then pour in the shrimp and sauté them in the pan. Add a pinch of salt and cook the shrimp for three minutes per side, until they are pink and cooked.

  • Clean the dried peppers with a damp cloth. Then remove the stem and seeds, and cut them into pieces or strips with scissors.

  • In a pan, heat a drizzle of extra virgin olive oil with a clove of garlic. Then add the dried peppers and after two minutes add the breadcrumbs. Stir the peppers often to prevent burning, and when they start to darken and the breadcrumbs are toasted, remove the pan from the heat.

  • Cook the orecchiette in plenty of salted boiling water; once cooked, drain them and pour them into the pan with the peppers. Also add the shrimp and let it all blend over the heat for a few minutes.

  • Serve at the table and enjoy your meal!
