Pasta with anchovies, breadcrumbs and tomato

Ingredients

  • 7 oz pasta
  • 6 anchovy fillets in oil
  • 1 clove garlic
  • 4 tbsp breadcrumbs
  • 4 tbsp tomato purée
  • 1 tsp dried oregano
  • to taste extra-virgin olive oil
  • to taste salt
  • 1 chili pepper (optional)

Preparation

  • To make the pasta with anchovies, breadcrumbs and tomato: pour a drizzle of extra-virgin olive oil into a frying pan, add one clove of garlic and some chopped chili. Put over low heat.

  • Add the anchovies and let them melt, then add one tablespoon of the pasta cooking water until you obtain an almost creamy mixture.

  • Then add the breadcrumbs and toast them. Remove the garlic clove, add the dried oregano and the tomato purée. Cook for about 5 minutes.

  • Cook the pasta in plenty of boiling salted water; once cooked (preferably al dente) drain it and pour it into the pan with the sauce.

  • Toss and add one tablespoon of the cooking water to prevent the sauce from being too dry.

  • Serve the pasta with some chopped oregano. Enjoy your meal!
