The pasta with artichokes, peas, and prosciutto is enriched with cream, resulting in a rich and tasty first course.
Making this recipe is very simple: I cook the artichokes with peas and prosciutto in the pan; once the pasta is cooked, it is mixed with the sauce, to which I then added the cream.
A creamy and appetizing first course, perfect for the whole family!

Ingredients
- 7 oz pasta
- 3 artichokes
- 3.5 oz peas
- 1.75 oz prosciutto (or guanciale)
- 1 cup heavy cream
- to taste onion
- to taste extra virgin olive oil
- to taste salt
Steps
To make the pasta with artichokes, peas, and prosciutto, chop the onion and gently cook it in a pan with a drizzle of extra virgin olive oil.
Cut the prosciutto into cubes, add it to the onion, and let it brown for a couple of minutes.
Wash and clean the artichokes: remove the stems, cut off the tips (about 0.8 inches) and remove the outer leaves, which are the toughest. Then cut them into wedges and add them to the onion, salt and let them stew.
Also add the peas (previously washed), moisten with hot water until almost completely covering the sauce, and cook over low heat until fully cooked.
Cook the pasta in plenty of boiling salted water; once cooked (preferably al dente) drain it, and pour it into the pan with the sauce.
Finally, add the cream and stir to blend everything together; if necessary, add some of the pasta cooking water.
Serve and enjoy your meal!
