To make this dish creamy, I finished cooking the pasta by letting it cook for the last 2 minutes in the pan with the sauce, adding pasta cooking water as needed, just like when cooking risotto. Ingredients
- 7 oz pasta
- 7 oz asparagus
- 7 oz clams
- 1 clove garlic
- 1 bunch parsley
- as needed extra virgin olive oil
- as needed salt
Steps
To make the pasta with asparagus and clams, rinse the clams several times under running water to remove the sand.
Place the clams in a large pot with a drizzle of extra virgin olive oil. Cook them covered with a lid, until the clams are completely open. If necessary, add a ladle of cooking water. Then turn off the heat and remove the empty clam shells.
In a pan, lightly brown a chopped clove of garlic with a drizzle of extra virgin olive oil and chopped parsley. You may also add some chopped chili pepper if desired.
Wash the asparagus, dry them, and clean them by removing the end of the stalk and the outermost part; then cut them in half lengthwise.
Place the asparagus in the pan with the garlic and parsley, continue cooking by adding some boiling water.
When the asparagus are tender, add the clams and cook for 5 minutes. Finally, adjust the salt and remove the garlic clove.
Cook the pasta in plenty of boiling salted water. Drain the pasta 2 minutes before the expected cooking time and pour it into the pan with the asparagus and clams.
Continue cooking the pasta in the pan, adding a ladle of cooking water, and adding more cooking water as needed.
Serve the pasta and enjoy your meal!
