Pasta with Broccoli Rabe and Sausage

The pasta with broccoli rabe and sausage is a tasty and quick first course, made even more special by the addition of crunchy breadcrumbs.

To make this recipe I cooked the broccoli rabe in a pan and added browned sausage. Once the pasta was mixed with the sauce, I garnished the dish with toasted breadcrumbs and served.

With a few simple ingredients you’ll serve your guests a flavorful dish perfect for any occasion.

Pasta with Broccoli Rabe and Sausage

Ingredients

  • 7 oz pasta (about 2 cups dry)
  • 7 oz broccoli rabe (about 5 cups loosely packed)
  • 7 oz sausages (about 2–3 links, depending on size)
  • 1 clove garlic
  • 2 oz bread crumbs (about 1/2 cup / 7 tbsp)
  • as needed extra virgin olive oil
  • as needed salt

Steps

  • To make the pasta with broccoli rabe and sausage, wash and clean the broccoli rabe.

  • In a pan, brown the crumbled sausage, then transfer it to a small bowl.

  • In the same pan where the sausage was cooked, add a splash of extra virgin olive oil and the garlic clove; if you like, add some chopped chili. Place over low heat and lightly brown the garlic.

  • Then add the broccoli rabe and cook for 10 minutes; if needed add some water and cook until the vegetables are tender.

  • At the end of cooking remove the garlic, add the sausage back in and adjust the salt.

  • In a small pan warm a little extra virgin olive oil, then add the bread crumbs cut into cubes and toast them.

  • Cook the pasta in plenty of boiling salted water; once cooked (preferably al dente) drain and add it to the pan with the sauce.

  • Toss for a few minutes and serve adding the toasted breadcrumbs. Enjoy your meal!
