- 2 cups cabbage
- 3 oz bacon
- 1 clove garlic
- to taste extra virgin olive oil
- to taste salt
Tools
- Blender
Steps
To make pasta with cabbage and bacon, cut the leaves from the cabbage, removing the hard part of the core. Wash the cabbage leaves and cut them into strips.
In a pan, pour a drizzle of extra virgin olive oil, the garlic clove, and, if desired, some chopped chili pepper.
Put on low heat; when the garlic is slightly wilted, add the cabbage. Pour half a glass of water and cook for about 15 minutes, covering with a lid and stirring occasionally.
In another pan, brown the bacon, cut into cubes, with a drizzle of oil.
When the cabbage is cooked, remove the garlic and pour the cabbage into the blender bowl. Blend with an immersion blender until you get a smooth and homogeneous cream. Add a bit of water if necessary.
Pour the cabbage cream into the pan, add a pinch of salt, and the bacon.
Cook the pasta in plenty of salted boiling water. Once ready, drain the pasta al dente and pour it into the pan with the sauce.
Toss for a couple of minutes until the pasta is well combined with the sauce.
If you like, you can serve the pasta with a sprinkle of grated Pecorino cheese. Enjoy your meal!
