The pasta with cherry tomatoes, guanciale, and crunchy bread is a flavorful main course that is easy to make. I prepared a savory sauce composed of guanciale and cherry tomatoes, then mixed in the pasta, and finally added some crunchy bread. Quick to prepare, this pasta will make your taste buds rejoice!
I then discovered that in traditional Tuscan cuisine, this recipe is called spaghetti alla vigliacca. Some legends say that the name ‘alla vigliacca’ was an ironic reference to those who, out of hunger or haste, quickly prepared this dish using whatever they had on hand. Others say the name comes from the cunning with which the cook managed to make do with little, perhaps passing the dish off as something elaborate.

Ingredients
- 7 oz pasta
- 3 slices guanciale
- 10 cherry tomatoes (red and yellow)
- 1 chili pepper
- to taste basil
- 2 slices rustic bread
- 1 sprig dried oregano
- to taste extra virgin olive oil
- to taste salt
Steps
To make the pasta with cherry tomatoes, guanciale, and crunchy bread, cut the guanciale into strips and halve the cherry tomatoes.
In a pan, pour a drizzle of extra virgin olive oil, the guanciale, a few basil leaves, and some chopped chili pepper.
Sauté the guanciale, then add the cherry tomatoes and cook over medium heat for about ten minutes.
Roughly chop the slices of bread and pour into a small pan with a drizzle of extra virgin olive oil and some oregano. Toast the bread over high heat, then remove it from the pan and set aside.
Cook the pasta in plenty of salted boiling water; once cooked (preferably al dente) drain it and pour it into the pan with the guanciale and cherry tomatoes, and mix it with the sauce.
Finally, add the toasted bread and serve at the table. You can add grated pecorino cheese if you like. Enjoy your meal!
