The pasta with clams and porcini mushrooms is a flavorful first course that brings together the taste of the sea and the flavors of the woods. Only a few ingredients are needed to make this pasta unique: fresh clams, porcini mushrooms, parsley, garlic and olive oil. In this recipe I used fresh pasta, but long pasta or small gnocchetti are also very suitable. Pasta with clams and porcini mushrooms is perfect to impress friends and family at the table!

- Cooking methods: Stovetop
Ingredients
- 6 oz Pasta
- 4 oz Fresh clams
- 4 oz Porcini mushrooms
- 1 small bunch Parsley
- 2 cloves Garlic
- to taste Salt
- to taste Extra virgin olive oil
Preparation
To prepare the pasta with clams and porcini mushrooms, rinse the clams several times under running water to remove any sand.
In a large pot, brown one clove of garlic in a drizzle of extra virgin olive oil. Then add the clams and a ladle of hot water, cover with a lid and cook until the clams have fully opened.
Wash and clean the mushrooms, then slice them with a knife. In a pan, brown the chopped garlic with a little extra virgin olive oil and the chopped parsley.
Add the mushrooms, season with salt and cook for 10-15 minutes; if necessary, add a little of the cooking water. Finally, add the clams as well and toss everything together for 5 minutes.
Cook the pasta in plenty of salted boiling water; once cooked (preferably al dente), drain it and transfer it to the pan with the sauce.
Serve with a sprinkle of chopped parsley and enjoy!
