The pasta with garlic, oil, chili pepper, and breadcrumbs is a dish I have always loved since childhood: my grandmother used to prepare this pasta because she knew both my grandfather and I loved it. It can be made quickly using few and simple ingredients. To make the sauce more flavorful, I added some anchovies and grated pecorino cheese. Ingredients
- 200 g Pasta
- 1 clove Garlic
- 1 Chili Pepper
- 2 Anchovies
- 4 tablespoons Breadcrumbs
- 1 bunch Parsley
- to taste Extra Virgin Olive Oil
- to taste Salt
- to taste Grated Pecorino Cheese
Preparation
To make the pasta with garlic, oil, chili pepper, and breadcrumbs, in a pan pour the garlic with a drizzle of extra virgin olive oil and the chopped chili pepper. Lightly brown the garlic over low heat.
Then add the anchovies and cook for a few minutes. Dissolve the anchovies by adding a tablespoon of pasta cooking water.
In a small pan, pour a drizzle of extra virgin olive oil and heat over the stove. Then add the breadcrumbs and toast them, being careful not to burn them.
Cook the pasta in plenty of salted boiling water; once cooked (preferably al dente), drain and pour it into the pan with the chili pepper and anchovies, removing the garlic clove.
Add a tablespoon of pasta cooking water and toss for a few minutes.
Remove from heat and incorporate the chopped parsley and breadcrumbs. Mix to combine the ingredients.
Serve, optionally with grated pecorino cheese. Enjoy your meal!
