Pasta with Peas and Speck

The pasta with peas and speck is easy to make and very tasty. For personal preference, I used penne, but any type of pasta works with this sauce.

Most of my first courses are born by chance, I like to try combining different ingredients and always add a personal touch.

Pasta with peas and speck is a classic of Italian cuisine, all combined with cooking cream; my personal touch in this case was to add a teaspoon of curry.

For those, like me, who favor spices in cooking, they will greatly appreciate this pasta, rich in flavor and taste!

Pasta with Peas and Speck

Ingredients

  • 7 oz pasta
  • 2.5 oz peas (fresh or frozen)
  • 1.75 oz diced speck
  • 3.4 tbsp cooking cream
  • 1 tsp curry
  • to taste onion
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To make the pasta with peas and speck, pour a dash of oil and some chopped onion into a pan.

  • Put on the stove and when the onion is wilted, add the peas. Add hot water until the sauce is almost completely covered and cook over moderate heat until the liquid has almost completely evaporated.

  • Add the diced or stick-cut speck, and brown it with the peas.

  • Then add the cooking cream and a teaspoon of curry, salt to taste. Stir to combine the ingredients and obtain a creamy sauce. If it turns out too dry, add a tablespoon of the pasta cooking water.

  • Cook the pasta in plenty of salted, boiling water; once cooked (preferably al dente), drain it, pour it into the pan with the sauce, and mix for a few minutes.
