Pasta with Potatoes and Prosciutto

The pasta with potatoes and prosciutto is a first course with a unique and irresistible flavor. This recipe is made with simple ingredients: potatoes, prosciutto crudo, olive oil and chili pepper. I drained the pasta a couple of minutes before the suggested cooking time and finished cooking it together with the sauce, adding breadcrumbs. Finally I served the pasta with a sprinkle of grated Parmesan. The result was more than successful — finger-licking good!

Pasta with potatoes and prosciutto

Ingredients

  • 7 oz Pasta
  • 7 oz Potatoes
  • 5 oz Prosciutto crudo (one thick slice)
  • 1 Chili pepper
  • to taste Breadcrumbs
  • to taste Extra virgin olive oil
  • to taste Salt

Preparation

  • To make the Pasta with potatoes and prosciutto, peel the potatoes and cut them into small cubes; dice the slice of prosciutto crudo as well.

  • Pour a drizzle of extra virgin olive oil and the chopped chili pepper into a skillet, place over the heat and warm slightly.

  • Add the prosciutto and the potatoes, salt, and cover with hot water. Cook over low heat for about 10 minutes, until the potatoes are tender.

  • Cook the pasta in plenty of salted boiling water; drain it a couple of minutes before the package cooking time is up. Pour the pasta into the pot with the potatoes and prosciutto and add a sprinkle of breadcrumbs. If the sauce has reduced too much, add 1 tablespoon of the pasta cooking water.

  • Toss for a couple of minutes until the pasta is well combined with the sauce. Serve with a sprinkle of grated Parmesan or grated Pecorino, and enjoy!
