The pasta with pumpkin and crispy bread is a first course with a rich and tasty sauce. I cooked the pumpkin in a pan with garlic, oil, chili pepper, rosemary, and anchovies, meanwhile, I toasted some bread in a pan with oil and oregano. Once the pasta was cooked, I mixed it with the pumpkin and then added the crispy bread. Simple and easy to make, this dish will surprise everyone with its unmistakable taste.

Ingredients
- 7 oz pasta
- 7 oz pumpkin (already cleaned)
- 2 anchovies in oil
- 1 clove garlic
- 1 sprig rosemary
- 1 chili pepper
- 1 sprig dried oregano
- 2 slices stale bread
- to taste extra virgin olive oil
- to taste salt
Steps
To make the pasta with pumpkin and crispy bread, pour a drizzle of extra virgin olive oil, the garlic clove, a sprig of rosemary, and the chopped chili pepper into a pan.
Put on low heat. Add the anchovies and let them melt. Then add the pumpkin cut into cubes, pour in a little hot water and cook over medium heat to obtain soft pumpkin.
Finally, remove the garlic and add salt. Mash the pumpkin with a fork.
Cut the stale bread into cubes and put it in a small pan with a drizzle of oil and oregano. Stir, place on medium heat, and let it toast for a few moments.
Cook the pasta in plenty of salted boiling water; once cooked (preferably al dente) drain it, and pour it into the pan with the pumpkin.
Add a tablespoon of pasta cooking water and stir for a few minutes.
Finally, add the golden breadcrumbs, stir and serve. Enjoy your meal!
