Pasta with Zucchini and Cherry Tomatoes

Pasta with zucchini and cherry tomatoes is light and very tasty. Easy and quick to make, it’s the classic save-the-day dish. If you’re in a hurry, if you don’t have time to cook, or if you have unexpected guests, you can prepare this pasta in ten minutes and you need only a few simple ingredients. Pasta with zucchini and cherry tomatoes is a simple first course, but full of flavor.

Pasta with Zucchini and Cherry Tomatoes

Ingredients

  • 7 oz pasta
  • 2 zucchini
  • 10 cherry tomatoes
  • 1 chili pepper
  • 1 sprig oregano
  • to taste onion
  • to taste extra virgin olive oil
  • to taste salt

Preparation

  • To make pasta with zucchini and cherry tomatoes, pour a drizzle of extra virgin olive oil and the chopped chili pepper into a pan. Add the chopped onion, place over low heat, and let the onion soften.

  • Wash and clean the zucchini and cut them into strips. Wash the cherry tomatoes and cut them in half.

  • Add the zucchini and cherry tomatoes to the pan, add the oregano, and half a cup of water. Cook over moderate heat and salt at the end. The zucchini should be cooked and crunchy.

  • Cook the pasta in plenty of salted boiling water; once cooked (preferably al dente), drain and add it to the pan with the sauce.

  • Stir to combine the pasta with the sauce and then remove the pan from the heat.

  • Serve the pasta with grated parmesan (or pecorino) cheese. Enjoy your meal!
