Peppers and potatoes is a classic of Italian cuisine, particularly southern cuisine. It is one of the dishes I am most fond of and have been eating since I was a child. My grandmother used to prepare them with peppers freshly picked from her garden. A simple dish but rich in flavors and traditions of the farming world. It is always a joy to bring it to the table!

Ingredients
- 3 potatoes (medium)
- 7 oz peppers (red, green)
- to taste extra virgin olive oil
- to taste salt
Steps
To prepare peppers and potatoes, wash the peppers, remove the stem and seeds, then cut them into strips.
In a pan, pour a drizzle of olive oil and once hot, add the peppers. Cook them over high heat, stirring occasionally and being careful not to fry or boil them.
Meanwhile, peel the potatoes, cut them into pieces, and fry them in plenty of hot oil, then drain and place them on absorbent paper.
Once the peppers are cooked, drain them and add to the potatoes, season with salt and mix the ingredients well.
Serve hot and enjoy your meal!
