The pineapple, coconut, and amaretti muffin is a soft and delightful treat baked in an air fryer. Even in summer, I don’t give up on breakfast sweets like cookies and muffins, thanks to the air fryer that replaces the oven for baking! I made these muffins by adding syrupy pineapple, coconut flour, and amaretti to the batter; then I topped them with a glaze of powdered sugar and coconut and decorated with chocolate-glazed amaretti. These muffins are amazingly good!

Ingredients
- 1 1/2 cups All-purpose flour
- 1 tsp Baking powder
- 1 tsp Baking soda
- 10.5 oz Pineapple (syrupy)
- 1 3/4 oz Amaretti
- 1 Small egg
- 1/2 cup Brown sugar
- 1/3 cup Sunflower seed oil
- 1 container Plain yogurt
- 2 tbsps Coconut flour
- 1/2 cup Powdered sugar
- 1 tbsp Coconut flour
- 1 tbsp Water
- 10 Amaretti
- 2/3 oz Dark chocolate

Preparation
To make the muffins, sift the flour into a bowl and add the coconut flour, baking powder, and baking soda.
Crumble the amaretti. Drain the pineapple and cut it into small cubes.
In a large bowl, beat the egg with the brown sugar. Then add the seed oil and yogurt, continuing to mix to combine the ingredients.
Add the amaretti and pineapple to the mixture. Then gradually incorporate the flour mix, stirring until the dry ingredients become moist.
Spoon the batter into muffin liners and bake the muffins in a preheated air fryer at 350°F (175°C) for 20 minutes, or until golden brown and until a toothpick inserted comes out clean. Once done, let them cool.
Melt the chocolate in a bain-marie and cut the amaretti in half to garnish the muffins. With a knife or a teaspoon, spread the melted chocolate on the base of the amaretti. Place them on a tray lined with parchment paper and let the chocolate set.
In a small bowl, pour the powdered sugar and add the water and coconut flour. Mix with a spoon to obtain a smooth and thick glaze.
Spread the glaze over the surface of the muffins and garnish with the chocolate amaretti. Store them in the refrigerator and serve when needed. Enjoy!
