Pistachio lady’s kisses are crispy cookies with an irresistible taste. To make these lady’s kisses, I first prepared a dough with pistachios, then shaped the lady’s kisses and baked them. Once cooled, I filled the lady’s kisses with homemade pistachio spread cream. It’s hard to resist these pistachio lady’s kisses, one leads to another!

Ingredients
- 3/4 cup pistachios
- 1/2 cup brown sugar
- 1/2 cup butter
- 3/4 cup all-purpose flour
- 1 tsp vanilla extract
- as needed Pistachio spread cream

Preparation
To make the pistachio lady’s kisses, first finely chop the pistachios with the brown sugar. Then pour everything into the bowl of the stand mixer, or directly onto the work surface, and add the soft butter and vanilla extract. Start mixing with your hands and incorporate the flour.
Knead until you get a homogeneous dough; wrap it in plastic wrap and let it rest in the refrigerator for an hour.
Once the dough has firmed up, divide it into many small portions of about 1/4 oz each; then with your hands, take each portion and form balls.
Place the balls on the baking tray lined with parchment paper and bake in the preheated oven at 320°F for about 20 minutes, until golden.
Once cold, fill half of the hemispheres with the pistachio spread cream and join them with the other half. Enjoy!
