Today I propose the pizza with Bolognese, turnip greens cream, and Taggiasca olives: a triumph of flavors that enhances the taste of the earth. I made a margherita base using Bolognese instead of tomato sauce; then I topped it with turnip greens cream and Taggiasca olives. Once out of the oven, this pizza with its succulent topping will emit an irresistible aroma throughout the kitchen!

Ingredients
- 2 1/2 cups all-purpose flour
- 3/4 cup water
- 1 tsp fresh yeast
- 1 tbsp extra virgin olive oil
- 3/4 tsp salt
- 5 oz mozzarella
- 3 1/2 oz Bolognese sauce
- 3 tbsps Taggiasca olives
- 10 1/2 oz turnip greens
- 2 tbsps grated Pecorino cheese
- to taste extra virgin olive oil
Steps
To make the pizza with Bolognese, turnip greens cream, and Taggiasca olives, crumble the fresh yeast into a small bowl and add room temperature water. Stir until the yeast is completely dissolved.
In a large bowl or stand mixer, pour the flour and add the yeast and water mixture. Begin kneading. Also add the salt and extra virgin olive oil; knead until the mixture takes shape: it should form a compact and soft dough that does not stick to your hands or the bowl.
Cover the bowl with plastic wrap and let the dough rise for four hours, until it doubles in volume.
After the rising time, take the dough and divide it into three equal parts. Roll out the pizzas inside three round pans and let them rise for another 3/4 hours, away from drafts, preferably in the turned-off oven.
Wash and clean the turnip greens, blanch them in lightly salted boiling water. Once ready, drain and cool them. Then blend the turnip greens with the Pecorino cheese and a drizzle of extra virgin olive oil, until you get a creamy mixture.
Top the pizzas with the Bolognese and bake them in a preheated oven at 430°F for 5 minutes.
Then take them out of the oven, add the mozzarella, the turnip greens cream, and the olives. Put them back in the oven for another 5 minutes, or until desired doneness.
Serve the pizzas and enjoy your meal!
