The pizza with potatoes, sausage, and mushrooms is a rich and tasty idea for enjoying pizza at home. This pizza has become, along with the margherita, one of my favorites. I made the pizza in an elongated shape, but you can also make it round. I topped it with a mixture of boiled potatoes, oil, and grated pecorino; then I added mushrooms in oil and crumbled sausage. Finally, during the last five minutes of baking, I added the mozzarella. With simple ingredients and a few steps, you’ll enjoy a pizza with irresistible toppings!

Recipes with potatoes

Ingredients
- 10.5 oz all-purpose flour
- 3/4 cup water
- 1 tsp fresh yeast
- 1 tbsp extra virgin olive oil
- 3/4 tsp salt
- 3.5 oz potatoes
- 1.75 oz grated pecorino cheese
- 1 sausage
- 3.5 oz mozzarella
- 5.3 oz mushrooms in oil
- as needed extra virgin olive oil
Preparation
To make the pizza with potatoes, sausage, and mushrooms, crumble the fresh yeast into a small bowl and add room temperature water. Stir until the yeast is completely dissolved.
In a large bowl, or in a stand mixer, pour the flour and add the yeast and water mixture. Start kneading.
Also add the salt and extra virgin olive oil; knead until the dough takes shape: it should be a compact and soft mass that does not stick to your hands or the bowl.
Cover the bowl with plastic wrap and let the dough rise for four hours, until doubled in volume.
After the rising time, take the dough and divide it into three equal parts. Form loaves and place them on the baking tray lined with parchment paper and lightly greased. Or spread them in round pans to get round pizzas.
Stretch the pizzas with your hands and let rise for another 3/4 hours, away from drafts, preferably in the turned-off oven.
Peel the potatoes and boil them in a pot with plenty of water. Once cooked, mash them with a fork or potato masher.
In a bowl, combine the mashed potatoes with grated pecorino cheese and a drizzle of extra virgin olive oil. Mix the ingredients to obtain a homogeneous mixture.
Top the pizzas with the potatoes, crumbled sausage, and mushrooms.
Bake in a preheated oven at 428°F (220°C) for 5 minutes, then remove from the oven and add the diced mozzarella.
Put back in the oven for another 5 minutes, or until desired doneness. Enjoy!
