- 1 small potato
- 10 slices Bacon
- 1 drizzle Extra virgin olive oil
- 1 teaspoon Rosemary
- 1 teaspoon Oregano
- 1 teaspoon Chives
- 1 tablespoon Parmesan cheese

Preparation
To make the Potato and Bacon Roses, peel the potato and slice it thinly; the thinner the slices, the better they will bake in the oven.
Place the potato slices in a bowl and add a drizzle of extra virgin olive oil. Then add the rosemary, oregano, chives, and grated Parmesan cheese. Use a spoon to mix well, ensuring the herbs adhere evenly to the potatoes.
On a cutting board or work surface, lay two slices of bacon vertically, placing one on top of the other. Arrange the potato slices on them, overlapping each other. Gently roll the bacon to form a rose.
Place the roses in a greased cupcake pan, or in baking cups, and bake in a preheated oven at 392°F for 20 minutes covered with aluminum foil, then 20 minutes uncovered until golden brown. Serve warm and enjoy!
