The potato burgers are a vegetarian main dish made with a few simple ingredients.
I made the burgers with potatoes and grated Parmesan, and placed mozzarella in the center. Then I breaded them and cooked them in an air fryer, but you can alternatively cook them in a pan or in the oven.
In just a few minutes and with simple steps, you’ll create a tasty recipe suitable for the whole family.

Ingredients
- 1.2 lbs potatoes
- 0.7 oz Parmesan cheese
- 3.5 oz mozzarella
- to taste dried oregano
- to taste salt
- 1 egg
- to taste breadcrumbs

Steps
To make the potato burgers, peel and clean the potatoes, boil them in a pot with plenty of salted water.
When the potatoes are cooked, drain them and transfer them to a bowl. Mash them with a fork.
Add the Parmesan and oregano, mix to combine the ingredients.
With your hands, take a bit of the mixture, flatten it, and place mozzarella cubes in the center. Then close it well and shape it into the typical burger form.
In a bowl, beat the egg with a pinch of salt and pour the breadcrumbs onto a plate.
Coat the burgers first in the egg and then in the breadcrumbs.
Place the burgers in the basket of the air fryer lined with parchment paper and lightly greased. Cook at 356°F (180°C) for 10 minutes, turning them halfway through cooking.
Alternatively, cook them in a pan or in the oven at 392°F (200°C) for about 20 minutes, until golden.
