Pumpkin and Chickpea Croquettes

Pumpkin and chickpea croquettes are vegetarian bites cooked in an air fryer or in the oven.

For this recipe, I cooked the pumpkin in an air fryer (or alternatively, it can be baked); then I created a mixture with the pumpkin, chickpeas, and sun-dried tomatoes, to which I also added flour and breadcrumbs.

Crispy on the outside and soft on the inside, these croquettes are delicious served with a yogurt sauce: they’ll win you over at the first bite!

Pumpkin and Chickpea Croquettes

Ingredients

  • 12 oz pumpkin
  • 9 oz cooked chickpeas, boiled
  • 3 tbsp breadcrumbs
  • 3 tbsp all-purpose flour
  • 6 sun-dried tomatoes in oil
  • 1 sprig rosemary
  • to taste extra virgin olive oil
  • to taste salt
  • to taste breadcrumbs

Steps

  • To make the pumpkin and chickpea croquettes, wash and clean the pumpkin, remove the skin, seeds, and internal filaments; then cut the flesh into cubes.

  • Season the pumpkin with a drizzle of oil, salt, and rosemary. Cook it in an air fryer or in the oven at 360°F for 20-25 minutes.

  • Once the pumpkin is cooked, place it in a bowl, mash it with a fork and let it cool slightly.

  • In the blender bowl, pour the chickpeas and sun-dried tomatoes, blend to obtain a creamy mixture.

  • Combine the chickpea and sun-dried tomato mixture with the pumpkin, mix and then add the flour and breadcrumbs.

  • Add salt and mix to obtain a homogeneous mixture. Then, with your hands, take a little of the mixture and shape it into the typical elongated shape of croquettes.

  • Roll the croquettes in breadcrumbs.

  • Place the croquettes in the air fryer basket lined with baking paper and slightly greased. Cook at 400°F for 8-10 minutes, until golden.

  • Alternatively, cook them in a pan or in the oven at 400°F for about 12-15 minutes, until golden.
