Pumpkin Meatballs with Mustard and Honey Sauce

The pumpkin meatballs are delicious bites with a gooey center, baked or fried, and served with a tasty mustard and honey sauce. Pumpkin is the queen of autumn, and as every year, I enjoy inventing recipes with this vegetable, creating both sweet and savory dishes. This time I made soft meatballs with pumpkin and a brie center, and served them with a delightful sauce made with mustard, honey, turmeric, and chives. It was a great success!

Pumpkin Meatballs with Mustard and Honey Sauce

Ingredients

  • 9 oz Pumpkin
  • to taste Extra virgin olive oil
  • 1 sprig Rosemary
  • 1/3 cup Breadcrumbs
  • 1/3 cup Parmesan cheese
  • 1 oz Brie
  • to taste Salt
  • to taste Breadcrumbs
  • 1 tsp Curry
  • 3.5 oz Mustard
  • 1 tbsp Honey
  • 1 tsp Turmeric powder
  • 1 tsp Chives

Preparation

  • To make the pumpkin meatballs with mustard and honey sauce, clean and cut the pumpkin into pieces, removing the seeds and skin. Place the pumpkin pieces on a baking sheet lined with parchment paper. Drizzle with a bit of extra virgin olive oil and add the rosemary.

  • Bake in a preheated oven at 355°F for about 30 minutes. When the pumpkin is softened, remove it from the oven and mash it with a fork.

  • Then place the pumpkin puree in a bowl and add the breadcrumbs and grated parmesan cheese. Knead until you get a homogeneous mixture and adjust the salt.

  • Cut the brie into cubes. Take some of the mixture with your hands and place a piece of brie in the center. Close each meatball by hand, forming a ball and compacting the edges, making sure the cheese stays inside.

  • On a small plate, pour the breadcrumbs and add the curry, mixing with a spoon. Roll the meatballs in the breadcrumbs.

  • Fry the meatballs in plenty of hot oil until they are golden brown. Drain and place them on absorbent paper. Alternatively, bake them in a preheated oven at 390°F for 15 minutes, until golden.

  • In a small bowl, pour the mustard and honey. Add the turmeric and chopped chives, mix everything with a spoon.

  • Serve the meatballs with the sauce and enjoy your meal!
