Roasted Tomatoes

The roasted tomatoes cooked in the oven are easy to make and perfect to serve as an appetizer or side dish. Delicious and flavorful, once cooked, the roasted tomatoes can be used to dress main courses or pizzas, to stuff sandwiches and flatbreads, or enjoyed on crostini. With few and simple ingredients, you will bring a healthy and tasty side dish to the table. I am very fond of this recipe because my grandmother always made it, and every time I make it, it brings back many memories and emotions.

Roasted Tomatoes
  • Difficulty: Easy

Ingredients

  • 14 oz tomatoes (Romanella, S. Marzano, or Pachino)
  • 2 cloves garlic
  • 2 sprigs rosemary
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To make the roasted tomatoes, wash the tomatoes and cut them in half lengthwise.

  • Place the tomatoes on a baking tray lined with parchment paper, cut side up.

  • Season the tomatoes with chopped rosemary, thinly sliced garlic, and a pinch of salt.

  • Drizzle with a little olive oil and cook in a preheated oven at 428°F for 40 minutes.

  • The roasted tomatoes will be ready when they begin to darken. Serve them warm and enjoy!
