The sandy potatoes in the air fryer are an easy-to-make, flavorful side dish.
To make this recipe I cut the potatoes into cubes and soaked them for a few minutes to remove the starch; then I seasoned them with oil, rosemary, breadcrumbs and Parmesan.
Once cooked, you will have potatoes that are crispy on the outside and soft on the inside, perfect to accompany any dish or to be nibbled straight from the tray!

Ingredients
- 1.1 lb potatoes
- 1 sprig rosemary
- 2 tbsp breadcrumbs (gluten-free for celiacs)
- 1 tbsp grated Parmesan cheese
- to taste extra virgin olive oil
- to taste salt

Steps
To make the sandy potatoes, peel the potatoes and cut them into cubes.
Place the potatoes in a bowl and cover them with cold water. Soak them for 10 minutes.
Then drain the potatoes and dry them with a clean kitchen towel.
Put the potatoes in a bowl and season them with a drizzle of extra virgin olive oil, salt, chopped rosemary, breadcrumbs and grated Parmesan.
Mix well until the potatoes are completely coated.
Place the potatoes in the air fryer basket lined with parchment paper. Cook at 374°F for 15–20 minutes, until golden.
Shake the basket a couple of times during cooking to get the potatoes golden on all sides.
Once cooked, serve and enjoy!
