Preparation
To make the savory brisée pastry wreath, roll out the round brisée pastry and use a 8-inch mold to form a circle in the center (thus creating the wreath).
Use the removed brisée pastry from the center to make star-shaped crackers of various sizes, using special molds.
Place the stars on a baking sheet lined with parchment paper. Use a small star mold to make a hole in the center of half of the larger stars (which will be filled).
Transfer both the circle (wreath) and the stars to the preheated oven. Bake at 350°F for 15 minutes. Once cooked, remove from oven and let cool.
Cut the cherry tomatoes in half. Use toothpicks to make mini skewers: skewer a black olive, half a cherry tomato, and a green olive.
Spread the cream cheese over the surface of the wreath.
Take the large stars without holes and spread either sun-dried tomato pesto or basil pesto on them; then cover with the holed cracker.
On the small stars, place a small amount of pesto (some with red, some with green).
Decorate the wreath by placing the large stars, skewers, and small stars on the cheese. Garnish with rosemary and serve. Enjoy your meal!
