Savory Pie with Vegetables

The savory pie with vegetables is a rich and colorful vegetarian dish baked in the oven, ideal to serve as an appetizer or as an alternative main course. For its preparation, I first baked the vegetables and potatoes, then used them as a filling inside a roll of puff pastry along with mozzarella. A mix of fragrance and taste that will captivate everyone!

Savory Pie with Vegetables

Ingredients

  • 2 Zucchinis
  • 1 Eggplant
  • 2 Bell Peppers
  • 10 Cherry Tomatoes
  • 7.05 oz Potatoes
  • 2 cloves Garlic
  • 1 sprig Rosemary
  • 1 sprig Oregano
  • 1 sprig Thyme
  • to taste Onion
  • to taste Extra Virgin Olive Oil
  • to taste Salt
  • 1 roll Puff Pastry
  • 3.53 oz Mozzarella

Preparation

  • To make the savory pie with vegetables, wash and clean the vegetables, peel the potatoes and cut everything into cubes (of the same size) and place them in a large baking dish.

  • Drizzle the vegetables and potatoes with extra virgin olive oil. Add the garlic cloves and chopped onion (amount to taste).

  • Season with salt, add the oregano, rosemary, and thyme. With the help of a wooden spoon, mix and level well.

  • Bake in the preheated oven at 392°F for about 30 minutes, checking the cooking from time to time and, if necessary, stir to ensure even cooking. Once cooked, remove from the oven and let cool slightly.

  • Cut the mozzarella into cubes. Take a round baking pan and place the puff pastry.

  • Fill the puff pastry with the vegetables and mozzarella. Fold the edges of the pastry inward and place in the preheated oven at 392°F. Bake for 10-15 minutes, until golden. Enjoy your meal!
