Savory Porridge with Scrambled Eggs and Bacon

The savory porridge with scrambled eggs and bacon is a unique, light, and nutritious dish, perfect for lunch or a brunch. To prepare this recipe, I made the porridge with spelt flakes and water, alternatively, you can use oat flakes and vegetable broth. Savory Porridge

Ingredients

  • 3.5 oz spelt flakes (or oat flakes)
  • 0.85 cup water (or vegetable broth)
  • 2 eggs
  • 1 pinch salt
  • 1 tbsp grated Parmesan
  • 1 tsp chives
  • as needed extra virgin olive oil
  • 6 slices bacon
  • 5 cherry tomatoes

Steps

  • To make the savory porridge, pour the spelt flakes (or oat flakes) into a high-sided pot and add the water (or vegetable broth).

  • Stir with a spoon and cook over low heat for about 10 minutes. When the spelt flakes are cooked, remove the pot from the heat and transfer the porridge into two bowls.

  • In a bowl, beat the eggs with a pinch of salt, Parmesan, and chives.

  • Heat a non-stick pan with a little olive oil and pour in the eggs. Cook over low heat and, when the eggs begin to set, stir with a spoon to break them up and achieve the scrambled effect.

  • In a pan, toast the bacon slices without adding oil until they become crispy.

  • Garnish the porridge with scrambled eggs, crispy bacon, and chopped cherry tomatoes. Enjoy your meal!
