Ingredients
- 3.5 oz spelt flakes (or oat flakes)
- 0.85 cup water (or vegetable broth)
- 2 eggs
- 1 pinch salt
- 1 tbsp grated Parmesan
- 1 tsp chives
- as needed extra virgin olive oil
- 6 slices bacon
- 5 cherry tomatoes
Steps
To make the savory porridge, pour the spelt flakes (or oat flakes) into a high-sided pot and add the water (or vegetable broth).
Stir with a spoon and cook over low heat for about 10 minutes. When the spelt flakes are cooked, remove the pot from the heat and transfer the porridge into two bowls.
In a bowl, beat the eggs with a pinch of salt, Parmesan, and chives.
Heat a non-stick pan with a little olive oil and pour in the eggs. Cook over low heat and, when the eggs begin to set, stir with a spoon to break them up and achieve the scrambled effect.
In a pan, toast the bacon slices without adding oil until they become crispy.
Garnish the porridge with scrambled eggs, crispy bacon, and chopped cherry tomatoes. Enjoy your meal!
