Savory Puff Pastry Candles

The puff pastry candles with gorgonzola mousse and walnuts are a vegetarian and scenic appetizer, ideal to prepare and serve for the holiday season. For this recipe, I first made puff pastry cannoli, then filled them with mousse, and finally placed them vertically on a serving plate. For the candles’ “flame,” I used small tomato triangles. These savory puff pastry candles are easy to make and can be prepared in advance, allowing you to serve them when needed without having to leave your guests.

Ingredients

  • 1 roll puff pastry (rectangular)
  • 150 g gorgonzola
  • 50 ml milk
  • 70 ml cooking cream
  • 1 tbsp extra virgin olive oil
  • 10 walnut kernels
  • to taste cherry tomatoes
  • 2 sprigs rosemary

Steps

  • To make the Puff Pastry Candles, roll out the puff pastry and use a cutter to cut strips of different widths.

  • Take the cannoli molds, grease them, and gently wrap each strip around them, avoiding overlapping the pastry.

  • Place the cannoli on a baking sheet lined with parchment paper and bake in a preheated oven at 390°F for 15-20 minutes, until golden. Once cooked, remove and let cool.

  • In a saucepan, pour the milk and heat it over low heat. When the milk is warm, add the cubed gorgonzola and stir with a spoon.

  • When the gorgonzola has melted, also add the cream and oil. Cook for a couple of minutes, until you get a creamy and homogeneous mixture.

  • Remove from heat and let cool slightly, then add the coarsely chopped walnuts and whisk with an electric mixer to make a mousse.

  • Transfer the mousse to a piping bag without a nozzle. Remove the mold and fill the puff pastry cannoli with the mousse.

  • Stand the cannoli upright on a serving plate, placing the taller cannoli in the back and the shorter ones in the front.

  • Cut the cherry tomatoes, removing the seeds, and shape them into triangles. Place each triangle on the top of the candles to resemble a flame.

  • Garnish with rosemary and halved cherry tomatoes and serve. Enjoy!
