Soapmaker’s Spaghetti by Eduardo De Filippo

Soapmaker’s Spaghetti is a delicious and simple first course to prepare, made with spaghetti, breadcrumbs, olives, capers, and oil. This recipe is named after “soapmaker,” the nickname Eduardo De Filippo gave to his friend Navarra, who used to make him this dish. The peculiarity of this recipe is that the spaghetti, once seasoned, are placed in the oven to gratinate, thus obtaining a first course with a crunchy top: a true delight!

Ingredients

  • 7 oz spaghetti
  • 1 clove garlic
  • 1 oz capers
  • 1.75 oz Gaeta olives (pitted)
  • 3 tbsps breadcrumbs (or crumbled taralli)
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • To prepare the soapmaker’s spaghetti, pour a generous amount of extra virgin olive oil and the clove of garlic in a pan. Sauté lightly.

  • Add the desalted capers and olives, stir well to prevent burning. Cook for a couple of minutes.

  • Cook the spaghetti in plenty of boiling salted water. Drain the pasta al dente and add it to the pan with the sauce.

  • Continue cooking the pasta in the pan, adding a ladle of pasta cooking water, and adding more cooking water as needed.

  • Turn off the heat when the pasta is cooked, and a creamy sauce has formed. Remove the garlic clove and incorporate the breadcrumbs.

  • Transfer the spaghetti to a baking dish and place in a preheated oven, gratinate at 356°F for 15 minutes, until a crust forms on the surface.
