Spelt with beans and cherry tomatoes is a vegetarian first course with a genuine and enveloping flavor. Ingredients
- 3/4 cup pearled spelt
- 2/3 cup cherry tomatoes
- 7 oz canned cannellini beans
- 1 clove garlic
- 1 chili pepper
- to taste basil
- to taste extra virgin olive oil
- to taste salt
Steps
To make the spelt with beans and cherry tomatoes, pour a drizzle of extra virgin olive oil and minced garlic into a pan. If you like, add some chopped chili pepper. Place over low heat and let it warm up.
Then add a few basil leaves and the cherry tomatoes cut in half; cook over low heat for about 5 minutes.
Finally, add the beans and continue cooking; if necessary, add a bit of water.
Cook the spelt in plenty of salted water, following the instructions on the package for timing.
Once ready, drain it, pour it into the pot with the beans, and stir to combine the ingredients.
If desired, add a sprinkle of grated Parmesan cheese. Serve and enjoy your meal!
