The spiced apple cupcake is a soft baked treat, with a spiced filling and an irresistible taste. I made lactose-free cupcakes that I then filled with spiced apples cooked on the stovetop, and topped with whipped cream. The peculiarity of these cupcakes is their decoration reminiscent of butterfly wings (made from the removed part of the cupcakes). Soft and tasty, these cupcakes will delight both young and old!

Ingredients
- 1 1/4 cups all-purpose flour
- 2 eggs
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 1/3 cup sunflower oil
- Half packet baking powder
- 7 oz apples
- 3 tablespoons brown sugar
- lemon juice
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon sunflower oil
- 1/3 cup heavy whipping cream
- as needed powdered sugar

Preparation
To make the spiced apple cupcake, peel the apples, remove the core, and then cut them into cubes.
In a small saucepan, pour in the brown sugar and the juice of one lemon. Heat over low flame and let the sugar dissolve.
Add the oil and also pour in the apples. Stir and continue cooking over low heat.
Flavor with cinnamon and vanilla, and cook for about 10-20 minutes until the juice slightly thickens and the apples reach the desired consistency (to your taste).
Pour the mixture into a bowl and let it cool down.
Beat the eggs with the sugar until you get a cream. Add the vanilla extract and sunflower oil, mix the ingredients well.
Add the flour and baking powder, mix until you get a smooth and homogeneous mixture.
Take a cupcake tin with paper liners and fill them up to three-quarters.
Bake in the oven at 356°F for 15 minutes, or do the toothpick test. Once baked, leave them in the turned-off oven for 5 minutes with the door open. Then, remove from the oven and let them cool.
Whip the cream and transfer it into a piping bag.
Once the cupcakes are cold, use a knife to cut the surface to form a cavity, cutting carefully to avoid breaking the treats.
Cut in half the removed part of each cupcake, obtaining two butterfly wings.
Fill the cavity of the cupcakes with the spiced apples. Garnish each cupcake with a dollop of whipped cream.
Decorate each cupcake with two wings, pressing lightly, and dust the surface with powdered sugar. Enjoy!
