Spiced Couscous with Chickpeas, Cabbage, and Fennel

The spiced couscous with chickpeas, cabbage, and fennel is a rich, nutritious dish with a strong flavor. Spiced Couscous with Chickpeas, Cabbage, and Fennel

Ingredients

  • 1/2 cup Couscous
  • 1/2 cup Water
  • 1.8 oz Pre-cooked Chickpeas
  • 1 Fennel
  • 3.5 oz Cabbage
  • 1 tablespoon Tomato Sauce
  • 2 teaspoons Curry
  • 1 teaspoon Ground Ginger
  • 1 Carrot
  • to taste Onion
  • to taste Extra Virgin Olive Oil
  • to taste Salt

Preparation

  • To prepare the spiced couscous, wash and clean the vegetables (carrot, cabbage, and fennel), then julienne them. In a pot, pour a drizzle of extra virgin olive oil, the chopped onion, and the spices. Add the vegetables and place over low heat.

  • Cook for 10 minutes; the vegetables should be cooked but still crunchy. 

  • Then add the tomato sauce and chickpeas, continue to cook on low heat until the sauce thickens.

  • In a pot (or bowl), pour the couscous and wet it with boiling water. Cover with a lid and let it rest for 5 minutes. Then, fluff the couscous with a fork.

  • Then pour the couscous into the pot with the sauce, stir to combine the ingredients.

  • Serve, and optionally add grated Parmesan cheese to your liking. Enjoy your meal!
