Spiced Pancakes with Walnuts and Honey

The spiced pancakes with walnuts and honey are skillet-cooked desserts, perfect to enjoy warm for breakfast. Pancakes are typically American, and the batter can be made in many different ways by adding fruit or vegetables; I, however, have made classic pancakes with flour and milk, to which I added a mix of spices. American tradition has it that pancakes are served with maple syrup; but even in this case, the combinations can vary, and I opted for walnuts, honey, and cinnamon. These spiced pancakes with walnuts and honey are irresistible and can also be enjoyed as a snack or during a brunch.

Spiced Pancakes with Walnuts and Honey

Ingredients

  • 1 1/2 cups Flour
  • 1 tablespoon Baking powder
  • 1 tablespoon Baking soda
  • 2 tablespoons Sugar
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground nutmeg
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 3/4 cup Milk
  • 1/2 cup Walnut halves
  • 5 tablespoons Honey
  • 1 teaspoon Ground cinnamon

Preparation

  • To make the spiced pancakes with walnuts and honey, combine the dry ingredients in a bowl: start by adding the flour, then add the baking powder and baking soda. Begin mixing and add the spices and sugar.

  • Then add the egg and vanilla extract. Pour in the milk and mix everything with a whisk. You should obtain a smooth batter without lumps.

  • Take a small skillet, lightly grease it, and heat it over low heat. Pour a couple of tablespoons of batter at a time; when bubbles start forming on the surface and the edges begin to lift, flip with the help of a spatula.

  • Cook the other side for another 1-2 minutes, waiting for it to color. Repeat the same operation until the batter is finished. Place the pancakes on a plate stacked on top of each other.

  • Heat a small saucepan and then add the coarsely chopped walnut halves. Lightly toast them and then add the honey and cinnamon. When the honey is melted and starts to boil, remove from the heat and pour the mixture over the pancakes.

  • Serve the pancakes warm, enjoy!
