Spinach Croquettes with Ricotta and Ham

The spinach croquettes with ricotta and ham are tasty bites with a gooey mozzarella center. Ideal as an appetizer or main course, these croquettes are easy to make. As always, I recommend using quality and locally sourced products; in fact, for this recipe, I used fresh and just-picked spinach. However, I realize that not everyone has this option, so you can also use frozen spinach in the same quantity. You can bake the croquettes in the oven or use an air fryer, the result will be really satisfying and they will be appreciated by the whole family!

Spinach Croquettes with Ricotta and Ham

Ingredients

  • 9 oz spinach
  • 1/2 cup ricotta
  • 1.8 oz ham
  • 1 egg
  • 2 tbsp grated pecorino cheese
  • 1 oz mozzarella
  • to taste breadcrumbs
  • to taste salt
  • to taste extra virgin olive oil

Preparation

  • To make the spinach croquettes with ricotta and ham, wash and clean the spinach, then cook them in plenty of boiling water. Once ready, place them to drain in a colander.

  • Once the spinach has cooled, squeeze them well and chop them with a knife.

  • Chop the ham as well and pour it into a bowl with the spinach. Mix with a fork.

  • Add the ricotta and the egg, continuing to mix. Finally, add the pecorino cheese and adjust the salt.

  • If the mixture is sticky, add breadcrumbs to obtain a soft but workable mixture.

  • Cut the mozzarella into cubes. With your hands, take the mixture, flatten it, and place 2 mozzarella cubes in the center. Then, still using your hands, form the croquettes into a round and flattened shape.

  • Roll the croquettes in breadcrumbs and place them on a baking sheet lined with parchment paper.

  • Drizzle the croquettes with extra virgin olive oil and bake them in a preheated oven at 400°F until golden, about 15/20 minutes.

  • If you have an air fryer, cook them at 400°F for about 15 minutes, turning them halfway through.
