The strudel cheesecake is a very special and tasty cold cake. If you like the classic strudel, this dessert will not disappoint you; it will certainly impress friends and family! I made the cream with ricotta, mascarpone, and whipped cream. Then I garnished the cheesecake with some apricot jam and a mix of apples, raisins, and walnuts. A feast of flavor that will blow your mind!

Ingredients
- 1 1/4 cups Digestive biscuits
- 7 tbsps Butter
- 1 1/4 cups Ricotta
- 3/4 cup Heavy cream
- 1 cup Mascarpone
- 3/4 cup Powdered sugar
- to taste Apricot jam
- 2 Apples
- to taste Lemon juice
- 1/3 cup Raisins
- 2 tbsps Brown sugar
- 8 Walnut halves
- to taste Ground cinnamon

Preparation
To make the strudel cheesecake, prepare the cheesecake base. Blend the biscuits, add the melted butter and mix well. Spread the mixture obtained on the base of a springform pan (Ø9.5 inches), pressing it well with the back of a spoon, and place in the fridge to set.
In a bowl, combine the ricotta with 1/4 cup of powdered sugar and the mascarpone, mixing well until the ingredients are perfectly combined. Whip the cream together with the remaining 1/2 cup of powdered sugar and gently fold it into the previously made cream, mixing with an upward motion.
Pour the obtained mixture over the biscuit base, leveling well. Place the cheesecake in the refrigerator and let it rest for about 3 hours.
Meanwhile, put the raisins in a bowl with hot water for about ten minutes.
Peel the apples and cut them into cubes, then place them in a bowl together with the brown sugar, lemon juice, chopped walnuts, and a sprinkle of cinnamon. Mix well and let macerate for 10 minutes. Squeeze the raisins well and add them to the apples.
When the cheesecake is well set, remove it from the fridge, pour over the apricot jam, trying to distribute it well over the entire surface.
Pour the mix of apples, raisins, and walnuts over the jam. Put it back in the fridge for another hour and then serve cold. Enjoy!
