The stuffed vegetarian friggitelli are a baked main course that can be made in a few simple steps. First, I filled the friggitelli with a mixture of breadcrumbs, grated pecorino cheese, garlic, parsley, oregano, paprika, and extra virgin olive oil. I then baked them, and once out of the oven, they will emit a delightful aroma! This time I opted for a light but undoubtedly tasty filling, to which you can add spices, other aromatic herbs, or olives and capers as desired. This recipe is very versatile and easy to prepare, as it requires few and simple ingredients that will create a dish with an irresistible flavor!

Ingredients
- 10 Friggitelli
- 4 tablespoons Breadcrumbs
- 2 tablespoons Grated Pecorino Cheese
- 1 teaspoon Paprika
- 1 bunch Parsley
- 1 sprig Oregano
- to taste Garlic
- to taste Extra Virgin Olive Oil
- to taste Salt
Preparation
To make the stuffed friggitelli, wash the friggitelli and remove the stalk by cutting off the top part with a knife and removing the seeds.
In a bowl, pour the breadcrumbs and pecorino cheese. Mix with a spoon, add the paprika, chopped oregano, and parsley. Optionally, add some chopped garlic.
Pour a drizzle of extra virgin olive oil, and finally salt. Fill the friggitelli with a spoon.
Place the peppers on a baking tray lined with parchment paper and drizzle with a little extra virgin olive oil.
Bake in a preheated oven at 392°F (200°C) for 20 minutes, until golden. Serve hot or, if you like, at room temperature. Enjoy your meal!
