The two-tone cake with cherries without baking in the oven is a dessert rich in flavor and scenographic appearance. I made a no-bake shell made of cookies, cocoa, and butter; then I filled it with a dark chocolate ganache and pastry cream. I finished the filling with cherries cooked in a pan and decorated with dollops of whipped cream, chocolate flakes, and fresh cherries. Ingredients
- 7 oz plain cookies
- 3 tbsp unsweetened cocoa powder
- 7 tbsp butter
- 1/3 cup heavy cream
- 3 oz dark chocolate
- 10.5 oz pastry cream
- 12 oz pitted cherries
- 2/3 cup sugar
- 1 tbsp cornstarch
- 2 tbsp whipping cream
- 10 cherries
- as needed chocolate flakes

Steps
To make the two-tone cherry cake, prepare the base. Blend the cookies until sandy, then place them in a bowl and add the cocoa. Mix with a spoon and add the melted butter.
Thoroughly combine, then spread the mixture on the base and sides of a springform pan, press well with the back of a spoon and place in the fridge for a few minutes to set.
In a saucepan, heat the cream over low heat; then remove from the heat and add the chopped chocolate. Stir until smooth and glossy. Let it cool slightly.
Pour the ganache into the crust. Cover with aluminum foil and let it rest in the refrigerator.
Make the pastry cream.
Pour the cooled pastry cream over the ganache, cover with aluminum foil and place in the refrigerator.
In a saucepan, add cherries, sugar, and cornstarch. Cook over low heat, bring to a boil, until a sauce-like consistency is achieved.
Pour the slightly warm cherries over the pastry cream. Cover with aluminum foil and refrigerate for 4 hours.
Whip the cream and transfer it to a piping bag with a star tip.
Serve the two-tone cake garnished with dollops of whipped cream, chocolate flakes, and halved, pitted cherries. Enjoy!
