Vegan Melon Popsicles

The melon popsicles are perfect for combatting the summer heat thanks to the beneficial properties of melon, rich in vitamins and perfect for quenching thirst. These popsicles are made using blended melon pulp, then cooked for a few minutes with water, sugar, and lemon juice. To add more freshness, I then added some mint leaves. When you are hot and in need of something refreshing, these popsicles are the perfect solution!

Vegan Melon Popsicles

Ingredients

  • 1 melon
  • 1/2 cup water
  • 1/2 cup sugar
  • lemon juice
  • to taste mint leaves

Tools

  • Silicone Popsicle Mold
  • Sticks

Steps

  • To make the melon popsicles, cut the melon in half, and with the help of a knife, remove the seeds and fibers, then peel off the rind.

  • Chop the pulp into cubes and place it in a blender. Blend until a puree is obtained.

  • Then transfer everything to a saucepan, add the room temperature water and lemon juice. Add the sugar and cook until the sugar is dissolved, then cook for another five minutes, stirring occasionally.

  • Remove from heat and allow to cool. Wash and dry the mint leaves and add them to the mixture.

  • Pour the mixture into popsicle molds and freeze overnight to set.
