Yogurt and Berry Cups

Yogurt and berry cups are an alternative for those who don’t have an ice cream maker or yogurt maker at home. If you want to prepare a fresh and tasty dessert to enjoy in the summer and to offer to friends and family, these cups are easy and quick to make. Only a few ingredients are needed to create a delicious yogurt cream accompanied by a berry coulis. The result will be satisfying and irresistible.

Ingredients

  • 1 cup plain yogurt
  • 1 cup whipping cream
  • 2/3 cup powdered sugar
  • Mint leaves for garnish
  • 1 cup blueberries
  • 1 cup wild blackberries
  • 1 cup raspberries
  • 1 1/2 tbsp sugar

Preparation

  • To make the yogurt and berry cups, blend the berries (leaving some aside for garnish), then pass them through a fine mesh sieve to remove the seeds, and collect the resulting liquid mixture in a bowl.

  • Then transfer everything to a small saucepan, add the sugar, and cook over low heat for five minutes. After that, put the coulis in a bowl and let it cool.

  • Beat the yogurt with the powdered sugar and then add the whipped cream, mixing from bottom to top to incorporate the ingredients well until you get a thick cream. Let it rest in the refrigerator for an hour.

  • When ready to serve, take the cups and use a piping bag to pour the yogurt cream, then add the berry coulis on top without mixing to achieve a marbled effect.

  • Garnish with the reserved berries and some mint leaves. Serve and enjoy!
