The zucchini and carrot burger is a tasty and vegetarian idea to enjoy in good company. I made a burger with zucchini and carrots by adding eggs, breadcrumbs, and Parmesan cheese. Once cooked, I served the burger inside a bun with lettuce and tomato, and dressed it with mayonnaise (you can use a sauce of your choice). With this recipe, you will win over all your guests!

Ingredients
- 10.5 oz zucchini
- 1.4 oz carrots
- 1 egg
- 1.5 cups breadcrumbs
- 3 tbsps grated Parmesan cheese
- to taste dried oregano
- to taste salt
- 2 buns
- 1 head lettuce
- 1 tomato
- to taste mayonnaise
Steps
To make the zucchini and carrot burger, grate the zucchini and carrots, and place them in a bowl.
Add a pinch of salt and start mixing the ingredients. Then add the egg. Continue to mix, incorporating the Parmesan cheese, and then a sprinkle of oregano.
Finally, add the breadcrumbs and blend until obtaining a homogeneous and soft mixture that can be worked with your hands.
Divide the mixture into 2 equal parts and flatten with your hands to shape into a burger. I placed the mixture inside a circular pastry ring (diameter 4 inches) and leveled the surface with the back of a spoon to obtain smooth and compact burgers.
Cook the burgers in a pan with a drizzle of oil, browning them on both sides.
Or bake them in the preheated oven, with a drizzle of extra virgin olive oil, at 392°F until golden, about 15 minutes.
Halve the buns and toast them on the grill on both sides.
Assemble the sandwich, starting from the bottom part: dress with mayonnaise, then lay down slices of tomato, the burger, lettuce, and dress with more mayonnaise.
Close the bun and serve. Enjoy your meal!
