Zucchini Croquettes

The zucchini croquettes are tasty vegetarian bites, crispy on the outside and soft inside. To make this recipe, I grated zucchini and carrots, then formed a mixture by adding eggs, breadcrumbs, and parmesan. You can cook these croquettes in a pan, in the oven, or in the air fryer. Zucchini croquettes disappear quickly because “one leads to another”!

Zucchini Croquettes
  • Difficulty: Easy

Ingredients

  • 14 oz zucchini
  • 1.75 oz carrots
  • 1 egg
  • 1 cup breadcrumbs
  • 4 tbsp grated parmesan cheese
  • to taste dried oregano
  • to taste salt

Steps

  • To make the zucchini croquettes, grate the zucchini and carrots, and place them in a bowl.

  • Add a pinch of salt and start mixing the ingredients. Then also add the egg.

  • Continue mixing, incorporate the parmesan, and then a sprinkle of oregano.

  • Finally, add the breadcrumbs and mix until you get a homogeneous and soft mixture that can be worked with your hands.

  • With your hands, take the mixture and form the croquettes.

  • Place the croquettes on a baking sheet lined with lightly oiled parchment paper. Pour a drizzle of extra virgin olive oil over the croquettes and bake them in the preheated oven at 400°F until golden brown, about 15 minutes.

  • Alternatively, cook them in the air fryer at 400°F for 10 minutes, or until golden brown.

  • Or in a pan, heat the oil, cook the croquettes, turning them gently until golden brown.

  • Serve the zucchini croquettes with a sauce of your choice. Enjoy!
