Steps for Preparing Air Fryer Accordion Potatoes

Choose potatoes of similar sizes, preferably yellow or red-fleshed, and medium-sized.

Wash them thoroughly under running water to remove any soil residue, as the skin will be kept for extra crunch. Dry them well with paper towels.

Place a potato on a cutting board and place two chopsticks (or wooden spoons) on the sides of the potato to prevent cutting all the way through. With a sharp knife, make parallel cuts at intervals of about 3-5 mm.

The chopsticks will help keep the base of the potato intact, creating the accordion effect.

Once cut, gently separate the slices slightly with your fingers to allow better penetration of the seasonings, and lay them on a baking tray with a drizzle of oil and salt.

Stuff each slice with julienned smoked scamorza, drizzle with extra virgin olive oil, ensuring it penetrates each slice, and sprinkle with grated Parmesan and oregano.

Bake in the air fryer at 392°F for 30 minutes or in a static oven at 392°F for 45 minutes.
