Since I bought the air fryer, everyone keeps asking me for them, so I make them at least once a week.
This dish combines the natural goodness of artichokes with the rich texture of golden breadcrumbs, enhanced by a combination of flavors.
Cooking, first in a pan and then with the air fryer, allows for a soft heart and a golden, even gratin with minimal use of oil, maintaining a balanced and healthy nutritional profile.
They are accompanied by a parsley mince that enhances freshness.
Ideal to serve as an appetizer or as a side dish for main courses, especially meat or fish-based, but also perfect to enjoy on their own for a delicious and nutritious break.

- 4 artichokes
- 1 lemon
- 1.4 oz Pecorino Romano
- 2 cups breadcrumbs
- 2 cloves garlic
- 1 bunch parsley
- to taste fine salt
- to taste extra virgin olive oil
- 1 tsp dried oregano

Steps for Preparing Air Fryer Gratinated Artichokes
To prepare the delicious air fryer gratinated artichokes, start by cleaning the artichokes.
Remove the toughest outer leaves and, if possible, leave about 1 inch of stem.
Cut them in half lengthwise and remove the thorns and any choke in the center.
Transfer them to a bowl filled with water and the juice of a squeezed lemon using the squeezer and let them sit for a few minutes. Then pat them dry with absorbent paper.
Peel two garlic cloves and brown them in a non-stick pan with a drizzle of extra virgin olive oil.
Then remove the garlic and add the artichokes, salt, and cook for about 20 minutes with the lid on, adding a little water during cooking so they remain nice and moist.
Meanwhile, prepare the breading with breadcrumbs, grated Pecorino Romano, chopped parsley, and dried oregano.
Once the artichokes are cooked, drizzle them with a splash of extra virgin olive oil using an oil sprayer and coat them in the mixture.
Place them in the basket of the air fryer lined with parchment paper, another splash of oil, and gratinate for 5 minutes at 392°F (200°C).

Choose fresh artichokes, firm, with closed and shiny leaves.
Use gloves to avoid staining your hands.
You can store the air fryer gratinated artichokes in the fridge in an airtight container for two days. Before consuming them, run them through the air fryer for 2 minutes at 356°F (180°C) to restore their crunchiness.
