Air-fryer gratinated artichokes are one of those dishes you could eat forever.

Because artichokes are one of my favorite vegetables, I put them everywhere and sometimes I eat so many that my stomach hurts — these are truly amazing! Besides being tasty, they are also crispy and you eat them like there’s no tomorrow.

Lucky for me, my dad grows them, so I cook them at least once a week.

I sauté them for a few minutes in a pan with a drizzle of oil and a clove of garlic — just long enough to soften them — then I coat them in a mix of grated Parmesan and breadcrumbs and into the air fryer they go.

They cook quickly while keeping the breading crispy and golden.

Artichokes are low in calories but rich in fiber, vitamins and minerals: they support digestion, help reduce cholesterol and blood pressure, support the liver, protect cells with antioxidants and contribute to satiety and blood sugar control.

A side dish that pairs well with meat, fish and cheese.

Ingredients for air-fryer artichokes

  • 4 artichokes
  • 3 tablespoons breadcrumbs
  • 3 tablespoons grated Parmesan
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic
  • to taste fine salt
  • 1 lemon

Steps for air-fryer artichokes

To prepare the gratinated artichokes in the air fryer WATCH THE VIDEO RECIPE

  • Start by cleaning the artichokes. Remove the tougher outer leaves until you reach the tender ones; cut the top of the leaves (about 1 inch) and the thorny tip, then remove the stem leaving only about 1 inch or peel it if you want to use it; gently open the inner leaves and remove the internal “choke” with a teaspoon; to prevent browning, immerse them in water with lemon as you work; finally, on a cutting board, quarter them and rinse well before cooking.

    Brush a pan with a drizzle of oil and sauté a clove of garlic. Then remove the garlic and add the artichokes and salt. Cook 3-4 minutes over low heat with a lid, just long enough to soften them.

    Meanwhile, in a bowl prepare the gratin mix. Combine the breadcrumbs and grated Parmesan. Stir and add the artichokes at room temperature. Coat the artichokes thoroughly and place them in the basket of the air fryer. Cook at 374°F for 9-10 minutes, turning them halfway through, until golden brown.

Storage for air-fryer artichokes

Store gratinated artichokes in an airtight container or wrapped in plastic wrap for 24 hours in a cool, dry place or in the refrigerator for two to three days.

Before serving, warm them in the air fryer at 320°F for about 2 minutes.
