Ingredients for air fryer potatoes

  • 2 potatoes
  • 1 tablespoon extra virgin olive oil
  • to taste dried oregano
  • to taste fine salt

  • 1 Mandoline
  • 1 Air fryer
  • Toothpicks
  • 1 Potato peeler
  • Paper towel

Steps for air fryer potatoes

To prepare the delicious rolled air fryer potatoes, start by choosing medium-sized potatoes. Peel with a potato peeler

  • and thinly slice with a mandoline and soak them in water for 15-20 minutes to lose the starch. Rinse

  • and pat dry with paper towel

  • roll each slice on itself gently and as tightly as possible, being careful not to break them, and secure with a toothpick.

  • Place them in the air fryer basket, I used the very convenient Philips Air Fryer 6 lt, without overlapping them too much, and season with a drizzle of extra virgin olive oil and a sprinkle of dried oregano. Cook at 392°F (200°C) for about 12 minutes, or until golden, turning them halfway through cooking. Once golden and crispy, serve the air fryer potatoes hot, perhaps with a yogurt sauce or a light mayonnaise.

Storage

Store the potato chips in an airtight container for a few hours at room temperature or in the fridge for 2 days. Before serving, reheat in the air fryer at 320°F (160°C) for 2-3 minutes.

I do not recommend freezing if you want to maintain the typical crunchy texture of the potato chips

Freeze Before Cooking
After cutting the potatoes, soak them in cold water for 10 minutes to remove the starch.
Dry them well, and roll them, securing them with skewers. Arrange them on a tray and freeze them separately (without overlapping).
Once hardened, transfer them to a food bag.
When you want to use them, cook them directly from frozen in the air fryer at 375°F (190°C) for 15-16 minutes.
