The all apple cake is a genuine and rustic dessert that highlights the flavor of apples.

And if an apple a day keeps the doctor away, with this our doctor can go on vacation!

A dessert where the absolute stars are indeed the apples, which drown in a little batter.

This creates a unique and light texture, where the apples slowly cook until they become soft and juicy, while the batter forms just a light binder between the slices of fruit.

Practically a mille-feuille but with fruit.

Golden or Renette apples are used, varieties that tend to hold their shape during cooking and offer a perfect balance between sweetness and acidity. The touch of cinnamon enriches everything, with warm and spicy notes, further enhancing the flavor of the apples.

During cooking, the cake releases an enveloping aroma that recalls traditional kitchens and desserts of the past.

It has a rustic and inviting appearance. The apple slices arranged in layers are well visible, and the golden surface has a slight caramelization, as it is sprinkled with sugar before baking.

It is perfect to serve both warm and cold. It can be accompanied with a scoop of vanilla ice cream or a spoonful of whipped cream to add a touch of creaminess. It is also ideal for a light breakfast or an afternoon snack, accompanied by a cup of tea or coffee. Its lightness makes it suitable to be enjoyed at any time of the day.

Steps for preparing the all apple cake

Watch the video recipe for a perfect preparation

Start by peeling the apples with a peeler or a knife. Cut in half, remove the core and slice thinly, with a mandoline, creating slices about 2-3 mm thick. This thickness will allow the apples to soften well during baking.

Soak some raisins in water to decorate the edges at the end.

In a large bowl, beat the eggs with the sugar with an electric mixer, until you get a light and foamy mixture

Gradually add the oil and milk while continuing to mix, then the flour and sifted baking powder, cinnamon, and finally the apples.

Mix and blend everything well with a silicone kitchen spatula and pour into a 22 cm cake pan lined with parchment paper. Level and decorate the edges with dried fruit, raisins, and almonds.

Bake at 350 degrees Fahrenheit for about 35-40 minutes. Before removing, do the toothpick test.

When done, remove from oven and serve warm or at room temperature and…

Storage and tips for the all apple cake

Use organic apples if possible.

You can store the all apple cake at room temperature for two days covered with plastic wrap or in an airtight container.

If you want to keep it for more days, store it in the fridge always covered with plastic wrap or in a container. The cake in the fridge will tend to become slightly more compact, but it will retain its flavor and moisture.

Before consuming it, I recommend bringing it back to room temperature or warming it slightly in the oven for a few minutes. This will help to restore its softness and intensity of flavors.
