The tart is one of those desserts you just can’t resist. Any occasion is a good one to enjoy it, starting from the morning, as breakfast, dessert, or snack.
Rich in jam and with butter-free shortcrust, it’s healthy, delicate, and quick to prepare because
it doesn’t require resting times. So in a few steps, the tart is ready!
A delightful aroma fills the house, making your mouth water. Perfect to serve with coffee, tea, or good plant-based milk.
I recommend buying jams with a high fruit content, always read the ingredients before purchasing, even if slightly more expensive it’s worth it.

Ingredients for the apricot tart
- 2 1/2 cups type 1 flour
- 1/3 cup sunflower seed oil
- 2 eggs
- 1/2 lemon zest
- 5 tablespoons erythritol or
- 1/3 cup whole cane sugar
- 1 jar apricot jam
- 1 teaspoon baking powder

Steps
To prepare the delicious apricot tart, start by getting a bowl where we will insert our ingredients, precisely the eggs, the erythritol or cane sugar, and beat well with a whisk, then add the sunflower oil in a stream and zest and continue mixing, then the zest of half a lemon, the baking powder, and little by little the flour. Then mix the ingredients well before pouring them onto a pastry board and knead energetically
until you get a smooth dough. Then line your pan with parchment paper and spread a third of the dough with your hands
creating edges, and with a fork, prick the entire surface to prevent bubbles from forming during baking, and add the apricot jam evenly using a spatula or spoon.
For the remaining 1/3 of the dough, flour it and roll it out well with a rolling pin, I like it thin, but you can do it to your taste. Then, with a kitchen cutter, create strips to garnish the tart.
Place them on the base, first vertically and then horizontally, until fully garnished. Meanwhile, preheat the oven to 350°F and bake for about 30 minutes in a static oven.
After the baking time, take it out of the oven, let it cool, and finally serve with good coffee or your preferred drink.
Storage and Notes
The apricot tart keeps for two/three days in a cool, dry place.
