Air fryer au gratin artichokes are one of those dishes you could keep eating forever.

Starting from the fact that artichokes are one of my favorite vegetables — I put them everywhere and sometimes eat so many they give me a stomach ache — these are truly amazing! Besides being tasty, they are also crunchy and you eat them like there’s no tomorrow.

And lucky me, my dad grows them, so I cook them at least once a week.

I sauté them for a few minutes in a pan with a drizzle of oil and a clove of garlic, just enough to soften them, then I coat them in a mix of grated Parmesan and breadcrumbs and off they go into the air fryer.

They cook quickly while keeping a crunchy, golden crust.

Artichokes are low in calories but high in fiber, vitamins and minerals; they aid digestion, help reduce cholesterol and blood pressure, support the liver, protect cells with antioxidants and contribute to satiety and blood sugar control.

A side dish that pairs well with meat, fish and cheese.

  • 4 artichokes
  • 3 tbsp breadcrumbs
  • 3 tbsp grated Parmesan
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic
  • to taste fine salt
  • 1 lemon

    Start by cleaning the artichokes. Remove the tougher outer leaves until you reach the tender ones; cut off the top of the leaves (about 3/4–1 1/8 in) and the pointy tip, then remove the stem leaving only about 3/4–1 1/8 in or peel it if you want to use it; slightly open the central leaves and remove the inner “choke” with a spoon; to prevent browning, immerse them in water with lemon while you work; finally, on a cutting board, quarter them and rinse well before cooking.

    Grease a pan with a drizzle of oil and sauté a clove of garlic. Then remove it and add the artichokes and salt. Cook 3-4 minutes over low heat with a lid, just long enough to soften them.

    Meanwhile, in a bowl, prepare the gratin mix. Combine the breadcrumbs and grated Parmesan. Mix and add the warm (room temperature) artichokes. Coat the artichokes well and arrange them in the basket of the air fryer. Cook at 374°F for 9-10 minutes, turning halfway through, until golden brown.

Storage of air fryer artichokes

Store the au gratin artichokes in an airtight container or wrapped in cling film for 24 hours at room temperature in a cool, dry place, or in the refrigerator for two to three days.

Before eating, reheat in the air fryer at 320°F for about 2 minutes.
