Black focaccia is always a great substitute for bread, and I enjoy playing with doughs. I like mixing different types of flour, and today’s result speaks for itself. Today I had fun with focaccia, but my marbled bread or high hydration bread are other experiments of mine that turned out really well, and I recommend taking a look at them.

This focaccia has a truly unique and delicate taste; the black rice gives it an aftertaste that conquers the palate, similar to the flavor of olives.

I recommend it seasoned exclusively with oil and rosemary to savor it to the fullest.

Great to serve to your guests at dinners; they will surely be amazed, or as a snack or accompaniment to a good aperitif. Let’s say every occasion is a good one to present it and make it known.

Ingredients for the black focaccia

  • 1 1/4 cups all-purpose flour
  • 1/3 cup black rice flour
  • 1/2 cup water
  • 1 packet dry yeast
  • 1 teaspoon sugar
  • 2 tablespoons extra virgin olive oil
  • to taste salt

Steps for the black focaccia

Let’s start by using a large measuring glass where we will put the lukewarm water and dissolve the yeast with the addition of sugar, which aids in fermentation. So, let’s stir it well with a teaspoon until a kind of foam forms.

Meanwhile, in a bowl, add the flours, then the water with the yeast, and finally the extra virgin olive oil and start giving an initial mix. Finally, add the salt.

Knead well until you get a compact and homogeneous dough. Then, leave it in the bowl and cover it with a cloth, and let it rise for at least 6 hours.

After the rising time, grease a round baking pan with a diameter of 14 inches and spread the dough with your fingertips, in other words, use your hands to create dimples and let it rise for another 3 hours.

Finally, add the rosemary and bake at 430 degrees Fahrenheit for about 15 minutes.

Add a drizzle of extra virgin olive oil and serve. Enjoy your meal
